GF Crepes

I never thought making crepes could be so easy but it is. I usually avoid making GF pastries and such from scratch when im in apartments for short periods of time because the flour mixes, xantham gum, gf vanilla and so on. HOWEVER, living with my new roommate in South Africa has been a blessing. Here is it nice and simple:

What you need:
- A HOT frying pan, heated
- butter or oil, I think oil with a high burning temp such a coconut oil is great but to save money just use veg oil
- An old glass jar (such as a tomato sauce jar, cleaned obviously)
- For just you and for practicing all you need is one egg
- Roughly 3/4 cup of your desired milk. I have made them with both soy and rice milk
- GF flour. I use rice flour because it is easy to find and work with (no blend needed)
So add the egg and milk to your jar, close it and shake it up REAL GOOD! Then add flour. You want the batter to be runny but with enough flour to bind and form the crepe. I never measure but I think somewhere around 1/2 cup would be good.

Try it out and add more flour or milk until you get it right. Eventually you will be able to do it without thinking. Moving around into furnished apartments around the world for a few months at a time has made me very resourceful in the ktichen. No measuring cups, mixing bowls, tupperware or anything. The glass jars that Nutella comes in are great drinking glasses when they are finished.

As for the filling of your crepe, be creative. You can fill them with just about ANYTHING! I made mine today with strawberry jam. YUM! Share your creations with me!
