Johnny Cakes

Since I have living in South Africa there have been food items I have really missed. Gluten free flour is not readily available on the shelf and they dont sell half of the products we carry like corn tortillas and other bread, muffin and other mixes.

I wanted to make my  grandma's White Sauce to go over some homemade GF meatballs but there was no gluten free flour or cornstarch to be found. Instead we found Corn Flour. The South Africans usually like Mieliepap out of it, which can be thin like porridge or think like something you have never had before.

My roommate, being the amazing person that she is, decided to make Johnny Cakes out of them (of course missing a few of the ingredients)

The first night she made them by just adding water to the flour and then frying them in little patties. We then ate them with chopped tomatoes and cucumbers.

This morning I made them with water, a little sugar and cinnamon and ate them with honey (they dont have maple syrup here)

As a GF Girl you really have to experiment with what you have. Once we get the Johnny Cakes recipe down, I will share it with you again!
