Keep the word "safe", safe for us! -

Today my brother lost a friend to a food allergy. It broke my heart when I heard this for many reasons. First of all, this child, friends and family knew he had a serious food allergy. Second of all, this was completely avoidable. I know I cannot sit here and dwell on this awful event, however I would like you to remember that allergies are life threatening. Some symptoms are visible and some are silent. Some have instant effects and some come with time. However NO ONE should have to worry about eating something they believe is "safe".

 The word "safe" means more to a person with food allergies than it does to an average individual. To me, it means no stomach aches, fevers, mood swings, long-term effects such as malnutrition and so much more. To many it means no visits to the hospital, no epi pens, no trouble breathing. The word "safe" allows us to have a sigh or relief. I can eat that! YAY!

Please don't roll your eyes or think its ok to pretend its safe or forget to tell the chef or wash the ice cream scoop or put bread on my plate, dip your cracker in the dip, mix up the soy milk with the cows milk. If you mess up, admit it.. its better than being quiet!

Pacific Foods Almond Milk!!

SO great! I have been a rice milk person for a very long time. When I went to the grocery store recently I decided to try Almond Milk. I know many GF friends that bake with almond flour and use almond milk and so on. I drink my coffee black so I mostly just use it for cereal but wowo, ITS GREAT! Tony the tiger great! I really love it and if you don't have an almond allergy and need a lactose free, cholesterol free, trans fat free, low sodium, gluten free milk then give this one a try!

Hangar B Eatery

There are not many small and nice places to go out for breakfast on CC, or at least on my side of CC. We a Nonnies Country Kitchen which I dont even know if they are open anymore, a ton of muffin and coffee places and then the chains. I have only really found two places I really love, and for different reasons.

Larry's PX is great plain old fashion dinner in Chatham that my mother and I love. A little old man comes out to fill the ice in the soda machine and screams heave-hoe! The prices are great and the food is fantastic!

However Hanger B Eatery is new, funky, cool AND they have gluten free pancakes on the menu!! 


I didnt get the pancakes but I will next time I go. I was so excited for the gluten free sausages with eggs and the most amazing home fries I have ever eaten.

The fresh squeezed juice made me feel like I was biting right into a grapefruit and the OJ was the best I have ever had.


The service was incredible and the atmosphere was just what I was looking for! I highly suggest any and all to go to Hangar B Eatery next time your on the Cape!

Bad News!

I moved back to New England in June after spending 6 months in Africa. About a month after I came home I got sick. At first I thought it was a common cold but then it started to feel like a sinus infection. I was already exhausted from my busy summer schedule so all my tummy problems got all out of wak and I felt miserable. Soon I started to feel better and was able to get through everyday life.

I then moved back up to college and the same thing happened. About a month after I arrived on campus I got sick, but this time it was worse. This time symptoms were all over the place. I had sinus problems, my throat hurt, my nose was dry but I felt like I needed to use a whole box of tissues. My bowel movements (not that you want to know) where all over the place and I was just simply miserable. After a long month of blood tests and hell I finally picked up and took my mothers advice to go to someone different. I went to a ENT, ears, nose and throat specialist. He believes that I may have become more sensitive to gluten than I was before or developed a new allergy. We wont know for sure until the next season change and more tests but there yah go, crazy things happen everyday! 

SO if you have celiac disease or gluten intolerance, be careful when you are sick and realize that it could be a change in your allergic reactions or an increased sensitivity.

Make your own SUSHI!

All you need is:

- Sushi mat and paddle (trust me it will make your life so much easier)
- Nori sheets
- Sushi Rice (yes it needs to be sushi rice)
- Rice Wine Vinegar
- Whatever you want in your sushi roll. I love veggie maki with avocado, celery and carrots.

Go to the international section of your grocery store. (Stop and Shop or Shaws is just fine) They should have Nori Sheets, Sushi Rice, Rice Wine Vinegar, Wasabi, Ginger and Soy Sauce all in the same area.

You can get crab and salmon at the seafood counter, generally right next to the prepared sushi.

Cook 1 cup the sushi rice by following the package directions. Let it cool for about 10 minutes and then add a tablespoon rice wine vinegar.


Take out one Nori Sheet and spread the rice on most of it, leaving about an inch and a half at the top
Then add whatever you are putting in...




 It should have the ration like above...
Then roll it up...



Make sure your first roll has fillings tucked in. Then roll more and press evenly.
Then with a sharp knife with a gentle sawing like motion.. it should be too hard!



Then enjoy with your favorite wasabi, ginger and/or soy sauce.

Crustless Quiche.. aka FRITTATA


So we had nothing in our house except some random veggies and lots of eggs. Of course Sherrie begin as amazing as she is decided we should make a frittata. We threw together eggs, brie, tomatoes, spinach, garlic and carrots and make a frittata, Samm and Sherrie style. It was very filling which is what we needed. This is just a friendly reminder to my GF friends that you DO NOT need a crust to have a quiche!

THE BEST GF BAGEL!

Ok so granted I dont remember the last time I had a gluten bagel BUT the one item I felt no one had done right in the gluten free section was bagels. They either tasted like cardboard or rubber. I did find one that tasted like a croissant but I didnt want a croissant, I wanted a bagel. Thankfully I am more than willing to try new things and recently a new product hoped into my local grocery store.

Great substitute..

So I am Italian and I LOVE Brushetta. Usually I need to buy GF bread if I want bruschetta, but not anymore.

Use Endives in the recipe.

All you need is:

1 Endive
1 Roma Tomato
~3 basil leaves
1 clove garlic, minced
herb goat cheese (option)
salt and pepper to taste
drizzle of olive oil.

Directions:
1.  Dice up tomato and basil.
2. Mix tomatoes, basil, garlic, salt, pepper and olive oil
3. Spread goat cheese on endives
4. Place bruschetta mix on top of goat cheese and ENJOY!

BUT I HAVE NO TIME!

When we tell anyone for the first time that we have Celiac Disease they respond with " Oh that sucks", "Ahh that's really tough", "What do you eat then" and so many other classics. Its all true though. It sucks not to eat whereever you want and for your GF pizza to be double the price and to spend grocery shopping checking labels and praying your favorite chip company didn't change any ingredients and fail to inform you. It is really tough to have to make things from scratch and try eating packaged GF bread and watch it crumble in your hands but not have the time to make it from scratch. We eat very similar foods just minus the gluten...

So here are some tips with dealing with not having anytime and spending so much money on a $10 GF meal that is $1 for an average person.

  1. Make in advance and freenze it- You never will have time on Monday morning to bake a loaf of bread or Friday night to watch a batch of pizza dough rise, however you may have time to do both on Sunday night. Here is what I suggest. When you have the free time bake a loaf of bread or a box of pizza dough. When the bread is done, let it cool, slice it and freeze it. This will keep it from molding too fast which gluten free bread tends to do when left out and then remove amount needed each time. Also when it comes to other things. Make your pizza dough and then bake them all for about half to 2/3 of the time suggested on the box. Then freeze them putting parchment paper in between them for easy seperation when needed. How fantastic is that!
  2. Simply avoid meals that normally have gluten in them- I know this seems so simple but how many of us Celiacs don't do it. We buy GF pasta, GF bread, GF pizza and so one. We shounld cook more with GF grains like rice, potatoes, amarath, quinioa and so on. Explore your grocery store and you will be surprised. Don't go searching for GF croutons for your salad, think of something more creative like nuts, dried fruits and seeds. You will be amazed how much better your meals take, how much faster they are to prepare and how much cheaper your groceries are.

Turkey Franks!

We have to read the labels of everything and can never be completely safe. I was at a cookout the other day and all the hotdogs were put in buns and delivered to the table. Even if I could eat them, I couldn't anymore. I asked a friend to make sure a sausage I knew was safe by brand name didnt touch any bread or other non gluten free product.

Well when I was at the grocery store I found a few hotdogs with gluten free written right on the label like Nathan's hotdogs. However these products can be pricey.

Then I found Empire Kosher on sale  at Stop and Shop and looked them up on my smart phone. Sure enough this company makes a ton of gluten free products. Check them out and tell me what you think!  Empire Kosher GF List!

Be safe and don't cheat at BBQs this summer because who wants to be bedridden in the summer.

GF Crepes

I never thought making crepes could be so easy but it is. I usually avoid making GF pastries and such from scratch when im in apartments for short periods of time because the flour mixes, xantham gum, gf vanilla and so on. HOWEVER, living with my new roommate in South Africa has been a blessing. Here is it nice and simple:

What you need:
- A HOT frying pan, heated
- butter or oil, I think oil with a high burning temp such a coconut oil is great but to save money just use veg oil
- An old glass jar (such as a tomato sauce jar, cleaned obviously)
- For just you and for practicing all you need is one egg
- Roughly 3/4 cup of your desired milk. I have made them with both soy and rice milk
- GF flour. I use rice flour because it is easy to find and work with (no blend needed)
So add the egg and milk to your jar, close it and shake it up REAL GOOD! Then add flour. You want the batter to be runny but with enough flour to bind and form the crepe. I never measure but I think somewhere around 1/2 cup would be good.

Try it out and add more flour or milk until you get it right. Eventually you will be able to do it without thinking. Moving around into furnished apartments around the world for a few months at a time has made me very resourceful in the ktichen. No measuring cups, mixing bowls, tupperware or anything. The glass jars that Nutella comes in are great drinking glasses when they are finished.

As for the filling of your crepe, be creative. You can fill them with just about ANYTHING! I made mine today with strawberry jam. YUM! Share your creations with me!

GF Italian Girl's Dream Come True!!!!!

So I was debating between the two luxuries I had from a recent grocery store trip. GF Pizza of GF Pasta.. I could not decide and made my facebook status "pasta or pizza". One friend said both and suggested a ziti pizza. Sure enough I had to try it and OMG it was amazing.


Dare to be creative! My pizza had basil tomato sauce, sliced tomatoes, green peppers, brie and GF pasta!!! (I used corn pasta because it is lighter and put it on first so it stayed moist under the other toppings and when using brie add it in the last few minutes of cooking time for the best taste.) SO GOOD!!

The Issues we have with RICE

Ok so I have experienced many times throughout my travels and various roommates that many people cannot cook rice.  Many people use rice cookers and others use Uncle Ben's. It doesn't need to be this awful though and for use Gluten Free People, rice is a life saver.

So first of all there are lots of different types of rice and different types have different cooking directions so follow the directions on the package. Remember to reduce the heat. Do not wander too far from rice. You can hear when it is almost done and avoid the messy pot that is impossible to clean.

Once you have mastered rice (don't give up you will get it) then realize all things you can do with. You can use it in place of pasta or couscous. You can season it to your taste by adding seasonings while it is cooking or by replacing the water with broth. You can use it with chili, curry, stews and so on. It is really great addition to a salad when it is chilled. Also when you are looking to add a little more to your egg in the morning, mix up some veggies and left over rice. If you like you eggs friend then serve the veg rice on the side but you can also mix it into scrambled eggs or make and omelet.

Rice is great. I promise. Try different rices like Basmati, Wild Rice and others that your local grocery store provides. You will be amazed with the difference in taste. Enjoy!

Quick Snacks

I am always looking for easy and healthy quick snacks and sense I travel so much it is always hard. I have learned that knowing brand names of things that are GF is the best. Most Utz Chips tell you right on the back of the bag if they are gluten free or not and most of them are. Also SOcripsY soy chips from Whole Earth Foods are another new discovery that are naturally gluten free as well. Learn the companys that make you happy!

Natural Candy Store with the most GF candy I've ever seen

This is the best website I have ever found with the most GF candy I have ever seen.  I have a few blogs that I follow on a regular basis and one is Gorgeously Green. If you are a tree hugger hippie or aspire to be so, check this website out. She is amazing and always has so many new products, projects and ideas to help you be as green as possible.

If you stick to your GF diet you know that candy can be hard. I suffered through last christmas not eating one candy cane because I couldn't find gluten free ones anywhere. For the same price as in Stop and Shop I can buy them from this website.

I also found another product that made my heart skip a beat. Suncups! It is made out of sunflower butter instead of peanut butter. I am not allergic to peanut butter but know so many that are.

Discover New Grains- Quinoa

Such a cool grain, Quinoa is grain with a fabulous taste and amazing nutrional value. The protein is around 15% and a balanaced amount of amino acids. Its really easy to cook and fast. 1 cup of Quinoa to 2 1/2 cups of water or broth. After boil reduce to a simmer for 20 mins and tada. Its really great to use in place of rice while stuffing peppers or just in place or rice or pasta. I love to add it to salads as well. It is cheap, easy and so good for you! Give it a shot!

21st Birthday!!

Monday was my 21st birthday, yes I am a young one. However being in South Africa I didn't think I would have cake and knew I wouldnt be able to find ice cream. I was perfectly ok with it. Of course though my fabulous roommate worked her magic and made me gluten free cupcakes the day before my birthday and totally surprise me with them. She could not find GF frosting so she melted chocolate over them and let me tell you it was SO AMAZING.

She didnt stop there. The next day, my actual birthday we went out to my favorite restaurant in South Africa, Col Cacchio (they have GF pizza). They brought me a shot of what I like to cal teKILLA. After dinner they brought me a slice of cake with kiwi and happy birthday written in chocolate sauce. I instantly said, im sorry I cant eat that, I am allergic to gluten. The waitress looked at me with the biggest smile and said "its gluten free".

It was amazing!!! Happy Birthday to me!!!

Peas and Tuna on Toast (GF of course)

One of my great grandma's famous sauces was a version of that white sauce you see people pour over cauliflower that makes it takes ten times better than it already does. Well here is a meal that is great when your cupboards are bear and you need something quick.

Ingredients:

- Gluten Free bread of some kind. The think, pre-made stuff is ok for this because you are not making a sandwich
- One can of your favorite tuna
- One can of peas or the healthier route, frozen peas
- 2 TB GF butter or margarine
- 2 TB Rice Flour (some other GF flours may work but I think rice is the easiest)
- 1 cup rice or soy milk
- Salt and pepper to taste

Directions:

1. Prep everything, this goes fast so have the tuna and peas drained and ready
2. In a pan heat up the milk and melt the butter at the same time
3. Once the butter is melted, add the flour, slowly and constantly stirring
3. Once you feel the white sauce getting thick add the tuna and peas.
4. Add salt and pepper to taste and mix a minute longer
5. Serve over GF toast and TADA!!!

It had to happen at some point

This past week I traveled along the Garden Route here in SA and had the time of my life. Staying in backpackers I was a little worried about the food situation. However the woman we were traveling with called ahead like she said she would and all was fine. They were actually over protective and very aware.

However, the last four days was with a different "tour guide" if you will. He said it was all set and that for the first night we would be having rice noodles. Well unfortunately Chinese noodles are not always RICE NOODLES! Also then ext night he didnt realize that burgers could have breadcrumbs in them, so I was served iceberg lettuce and tomatoes.

At first I was sad and in pain and then I was livid but I am looking at it as a learning experience for him, hopefully this will never happen again.

Read labels, explain the allergy ten, twenty, thirty times and be patient but DONT EAT IT if you are not positive!!!

A GF life is a hard one but not impossible!

Falafels

If there is one food that could have more flavors than falafels, please introduce me to it because to me falafels are a party in my mouth. I have not attempting making them on my own from scratch but instead depend on Orgran GF Falafel Mix. Its a JUST ADD WATER mix, and it is fabulous! The best part is how many ways you can use the mix. You can use it as a stuffing in a recipe such as stuffed peppers. I like it  best when fried into little balls and placed on top of a nice spring salad!

Be careful and make sure the falafel mix you buy is GF because many are not. This is the only brand I have seen thus far, if there are any others please let me know!!

Chicken and Pineapple over Rice

So a few years ago, one day in the summer my mom was at the grocery store and all over my younger siblings (there are many) and one of my cousins were really hungry. I was searching around the kitchen was so bare because it was summer and we were barbequing every night. What I found was a can of pineapple rings, two breasts of boneless skinless chicken, a can of chicken broth and rice. So the teenage me at the time thought this was a simple thing to figure out. I cooked the rice with the broth instead of water, then grilled the chicken and the pineapple just on the stove with nothing added. The kids loved it and believe it or not my aunt just asked how I made it.. Sometimes the simple things taste the best!

Lettuce Wraps?

One of the best ideas I ever had after I started eating gluten free was to wrap my sandwich in lettuce. I just took my normal sandwich and a large leaf of iceberg or romaine and rolled it. TADA. Its an easy gluten free sandwich without crumbly bread.

My favorite lettuce wrap is a BLT sandwich. Easy and self explanatory.

My roommate here in SA made a great lettuce wrap last night for dinner. Here in South Africa they have bags of mixed veggies themed to a particular stir fry. We bought the Hawaiian one and she stir fried the veggies and made a peanut sauce with thick soy sauce (make sure its wheat free) and chunky peanut butter ( and some hot water to help them mix).  We first put GF rice noodles in the lettuce and then the veggies, topped off with the peanut sauce and TADA. It was delicious.

Johnny Cakes

Since I have living in South Africa there have been food items I have really missed. Gluten free flour is not readily available on the shelf and they dont sell half of the products we carry like corn tortillas and other bread, muffin and other mixes.

I wanted to make my  grandma's White Sauce to go over some homemade GF meatballs but there was no gluten free flour or cornstarch to be found. Instead we found Corn Flour. The South Africans usually like Mieliepap out of it, which can be thin like porridge or think like something you have never had before.

My roommate, being the amazing person that she is, decided to make Johnny Cakes out of them (of course missing a few of the ingredients)

The first night she made them by just adding water to the flour and then frying them in little patties. We then ate them with chopped tomatoes and cucumbers.

This morning I made them with water, a little sugar and cinnamon and ate them with honey (they dont have maple syrup here)

As a GF Girl you really have to experiment with what you have. Once we get the Johnny Cakes recipe down, I will share it with you again!

Gluten Free/ Dairy free chicken parm

So my fabulous roomie, Adrienne and I made a great chicken parm that was gluten free and dairy free for dinner today. Since we are in South Africa, gluten free options are not everywhere. Our bread crumbs were made out of cornflake crumbs and left over crumbs from a loaf of bread we baked. It was great. We just coated the chicken in egg then the breadcrumbs and baked them. Served over corn pasta with homemade sauce, it was perfect!!

It can be hard but you can do it!!! And enjoy it!

I found home base

So my GF roomie and I found the most perfect store to buy gluten free food from. B Healthy in Stellenbosch, SA is off of Plein St. Really close to the University of Stellenbosch. It had so much great food and they said they would order anything they didn’t have. We got bread, cookies, crackers, nachos, peanut butter, aloe jam and so much more. Really it is fabulous. Also right next door to B Healthy is a little fast food place called Kauai. They had gluten free wraps, tons of salads and rice noodle dishes and so many amazing smoothies. Their food is fast, cheap and so divine!

Sorry I have not been blogging a lot but the internet here is much different than back in the states. I promise I am not leaving any exciting news out.

Gluten Free Bread from SuperSpar



So since I have been living in South Africa, I have had a hard time finding some gluten free foods I am use to always having back in the states. One being gluten free bread. I make my own back home from the bobs red mill mixes because most premade GF bread is not ideal for sandwiches and are really think and crumbly. While walking thru superspar, I asked the bakery if they had any gluten free pastries. They said I can order bread from them. So this morning at 9am, my roommate Adrienne (also has celiacs), our friend Chris and I took a jog down there.  When we came home I cut a slice and it was simply amazing!! I love bread but this bread was warm, fresh and fabulous.  The only down part was the huge air bubble in the middle, which wont matter when we eat the bread with mini sliders at a braai latter tonight!

Lesson learned: ASK! Do not assume that they dont have anything.

Poppadums

So as you may have noticed I am now blogging from South Africa. I am living on the university campus of Stellenbosch University on the Western Cape. I was worried about the food situation here but was sure I would figure something out. After my first day I discovered poppadums, a traditional indian crispbread and my god are they fabulous. I bought a pack from the company" spice and all things nice. They are labeled gluten free with the following ingredients:

Udad flour, Salt, Sodium Bicarbonate, Asafoetida, Vegetable Oil and additional indregients for different flavors.

You pop them in the microwave for just a few seconds and TADA!! Fabulous. I also found them on the menu at JAVA coffee and bar in Stellenbosch. Try them out, really!

Checkers


The first grocery store I tried out in South Africa was Checkers. They didnt have a lot but what they did have was great. I was able to find a good amount of gluten free pasta, crackers and a few local foods labeled gluten free. I would greatly advise feeling out all the local grocery stores while traveling abroad so you can see what they all have to offer. Safe travels!

Gluten Free Meals on Planes

Ok so right now I am living in South Africa. I am excited to share my experience with you while I am here. But I must start with how I got here withouth starving myself to death. I called the airline in which I was flying with (South African Airways) and requested gluten free meals for all my flights. They were fabulous. I was given my meal before all the other meals to make sure it was gluten free and with dinner I even got a gluten free roll.


Breakfast (photo above) was a little different but it came with a gluten free raisin cake! They were fabulous. If you are traveling on a flight with meals I would definatly call and they will accomidate you. My expereince with both United and South African Airways was fabulous!

My brother, niece and I went out for lunch today at the BBC and I had forgotten how great it was. A few months ago I went and had gluten free pizza but today I wanted a wrap. It is so nice to have a large menu to choose from as the BBC has just that. You really do not feel like you are missing out on anything. They even have options when it comes to gf beer, St. Peter’s Sorgham Ale and Lakefront’s New Grist Beer. How fabulous is that? Check out the huge menu for yourself and tell me what you think!

Gillians Foods


So when I first started eating gluten free, about two years ago I thought it best to avoid any form of bread, breading, cereal or anything such as. Some of the gluten free products as I have mentioned before just dont hit the spot and ruin the true taste of the food that I missed. My local Stop & Shop is always carrying new gluten free products and they have Gillian's Bread Crumbs. I love love love these bread crumbs. They have a perfect amount of seasoning and for my busy life as a college student I cannot make my own breadcrumbs like some other courageous gluten free friends of mine. I have used these bread crumbs in traditional reciepes such as chicken tenders. Delicicous.

Once I find a brand that works for me I begin to explore their other products. Gillians has a ton of great products and even better, my friend knows them making me feel even better purchasing the product. Thanks Bucci! ;) Check them out!

When I am sad, I bake

So today I didn't wake up on the happiest side of the bed. I didn't sleep well last night and felt ill this morning. I spent most of the morning moping on the couch where I eventually fell asleep. However before I feel asleep I did mangage to take a shower and get myself dressed.

I woke up to some stupid judge show where parents we arguing about something stupid. I changed it to channel 67 (the food network) I then decided I needed to get up. I went into the messy kitchen and started to clean. I washed ALOT of dishes and then began to bake.

I LOVE LOVE LOVE Bob's Red Mill Gluten Free Products. I started by baking a loaf of gluten free bread. I really am not a fan of the gluten free breads you can purchase already made at the store. They fall apart and never taste that great, so I love when I find the time to make my own bread. When the bread was baking I started to prepare cupcakes out of the gluten free chocolate cake mix. I put them in silicone cups to make sure there is no cross contamination and bake them for 15-20 mins. So delicious. I choose not to put frosting on them because I am not a huge fan and honestly didn't have any gluten free frosting on hand.

It is Impossible to be Gluten Free and a Vegetarian...Isn't It?

Its is not impossible and this time of year is a great way to start. Read cookbook after cookbook and google recipe after recipe until you find what hits the spot for you. My copy of the gluten-free vegetarian ktichen is covered by splashes of sauces, seeds from cherry tomatoes and smells of amazing creations.

I cooked with this cookbook by my side until I became comfortable with it. There is no Joy of Cooking for us gluten free warriors. Maybe one day there will be but for now park your butt in the gluten free section of your favorite book store  and thumb through until you find the right one for you.

Also eating as a gluten free vegetarian or vegan is easier because you don't have to worry about finding gluten free meat, which can sometimes be impossible and tricky.

Gluten Free Girl

I know that I have written about this book before but I really highyl suggest it to anyone who is gluten free. Shauna is amazing and the book is uplifting. She explains why cheating is so not worth it and how long she gets sick if she cheats or eats something cross contamidated. She has tons of recipes folded into her story. Try them, they really are energizing and delicious.

Gluten Free Girl is a blog as well, as I have mentioned before. I found the book via her blog but would advise reading the book and referencing the blog when you need a recipe.

Songs for kids with allergies....



I babysit children just like me, with allergies. Having songs that relate to you can help a lot! Listen to the Gluten Free Blues!! It is made for kids but I can tell you right now it made me smile!!

The Amazing (and Simple) Aleia's Stuffing



I found it! Well I was helped but I finally have a solution for my stuffing cravings. When at a holiday party, a family friend told me about Aleia's stuffing and said that Stop & Shop sold it. I didn't think mine did but I had not been home for a few months. I checked and they were just starting to stock the shelves with this amazing stuffing.

The package directions are a great way of making the stuffing but I needed in a rush, didn't know there was such a thing before. So I brought 2 cups of GF veggie broth and 6 tablespoons of butter to boil until the butter melted. I then added the stuffing and mixed it in. I let it sit, covered for a few minutes and then TADA! I had amazing stuffing.

I used the SAVORY flavor for this quick version of the stuffing. You can add onion, celery and carrots and cook it properly when the time allows. ENJOY!
